Virtamo, Nordic Summer Cookbook

The short but light-filled Nordic summer feels all the more magical thanks to its delicious flavours, as the gentle rays of the midnight sun light the way to the Midsummer table. Any excuse to spend time in the kitchen and gather your nearest and dearest only adds to the joy of summertime.May opens the summer harvest with refreshing spruce tip lemonade, nettle crepes, parmesan and lovage soup, and creamy rhubarb and vanilla buns. At the season’s loveliest garden party, wildflowers grace the table alongside generous servings of umami-packed potato salad, followed by chocolate mousse and cherry cake, and a creamy bilberry pie. The leftovers from a crayfish feast transform into the dreamiest bisque. And as August arrives with its dusky evenings, mushroom toast, currant and mascarpone cake, and an effortless gooseberry galette hit just the right note. The Nordic Summer Cookbook serves up a generous spread of the summer season’s finest. Within the pages of the book, you’ll find both sweet and savoury dishes along with nature-inspired DIY ideas for adorning the table.
